Tim Baldwin, Wine Director - Broadmoor Resort
|
|
Tim Baldwin came to the Broadmoor Resort in 2000. After training with the Court
of Master Sommeliers' International Wine Guild, Baldwin started his tenure in
the Tavern and the acclaimed Penrose Room as a supervisor/sommelier. Shortly
thereafter, Baldwin moved to the head sommelier/lead supervisor role for the
hotel and is currently the Broadmoor's Wine Director, overseeing all aspects of
the resort's notable wine programs. Baldwin may be a nouveau in vintage but he
has the soul of a classic wine master.

| Chef Marian Williams - Marian’s Gourmet |
 | Marian Williams, a native Coloradan, has been involved with many aspects of catering and restaurant operations for over 30 years – from catering for public and private events to managing and cooking at landmark eateries in Canon City and the Wet Mountain Valley. Her cooking and staff management philosophies have evolved into an emphasis on fresh local produce and meats, free of additives or preservatives, creative presentations and a focus on environmentally friendly packaging and recycling. Marian is now owner/operator of Marian’s Wholesale Desserts & Catering, specializing in customized menu and dessert planning for business groups large and small, family gatherings, weddings, picnics, nonprofit events and holiday affairs. |

 | My wife, Barb, and I have lived in the valley for almost forty years. All four of our children have grown up here—for us, this is home. Barb has taught in Custer County School for thirty-two years and is now in her sixth year as secondary principal. I have been a teacher, pastor, coach, wrangler, and wilderness guide. Three years ago I started Wild Strawberry Catering.
To us, Wild Strawberry is not just a name or a logo, it is a philosophy. In a culture driven by bigger, faster, and easier, we believe the wild strawberry stands as a symbol of quality born of creation’s patience. It represents what early twentieth century writer, David Grayson, called, "the slow logic of the earth."
The rhythms and seasons of nature are never in a hurry, but patiently bring forth the goodness of the earth. Our meats are slow cooked over hot coals of charcoal and apple wood. Whether your choice is brisket, ribs, pork loin, or chicken, we think you will agree that fast and easy is not always best.

Food and Wine is such a passionate interest for us that the only logical next step was to share that passion with others, but where? The Wine Mine found its home here because of a strong affection for the beautiful Sangre de Cristo Mountains and this fantastic valley. The Wine Mine offers a menu of fresh, house made and wholesome items with many wines to choose from. Having been part-time residents for six years, we are ever so pleased to be here fulltime as of this past January. We are delighted to be a part of this wonderful community and relish opportunities to be involved in the wonderful events it has to offer. Thank you to the community for being so welcoming.
